Apples and Greens

2-4 hand-fulls of arugula
1 apple
walnuts, pumpkin seeds, or sunflower seeds
extra virgin olive oil
balsamic vinegar
fresh ground pepper
sea salt

Directions:
In a large mixing bowl, combine arugula, sliced apple (this is easily done with a mandolin - just watch those fingers!), and nuts or seeds of choice. Mix to combine before drizzling with oil and vinegar (a little goes a long way). Finish with fresh salt and pepper.

I love playing with flavor combinations. Green apples (or pear) work great with walnuts, while sweeter apples work well with sunflower seeds. Go crazy and try strawberries with chia seeds.
