Carrot Cake Bites

Ingredients:
1 cup shredded carrot (save the greens, they are edible!)
10 medjool dates, chopped
¼ cup raisins
1 Tbsp fresh ginger, finely minced
½ cup unsweetened shredded coconut
¼ cup chopped walnuts
1 Tbsp cinnamon (a pinch of cloves, nutmeg, or cardamom if you'd like as well)
Extra water as needed
Coconut for rolling

Directions:
Shred the carrot, chop the walnuts, the dates, and the ginger. Add to your food processor with with raisins, coconut, and spices.

Pulse and scrape the sides for a minute or two until everything comes together. You may need to add a tablespoon or two (or three) to help it along.
Pour about 1/2 cup of the reserved coconut into a small bowl for rolling. Form into small balls or squares and place on baking sheet. I placed these in the freezer for 10 minutes to firm up before placing in a container and storing in the fridge.

These are a fantastic pre-workout snack. You could also bring them along for extended runs or bike rides when in training mode (way better than goos or chews!)

We made these to bring to Christmas Even dinner at a friend's house where lots of amazing and non-vegan desserts were being offered.
They were a huge hit! So much so that one of the hosts asked to keep the leftovers. I gladly left the carrot cake bites for them to enjoy. Don't be intimated in bringing a healthier, lighter option. The guests will thank you! Let's make healthy normal. |
