2 - 4 cups mixed greens
1 cup grape tomatoes
1 can artichoke hearts
1/2 can of black olives
lemon wedge
soy or other feta cheese alternative (optional)

2 - 4 cups mixed greens
1 cup grape tomatoes
1 can artichoke hearts
1/2 can of black olives
lemon wedge
soy or other feta cheese alternative (optional)
Directions:
Rinse and slice tomatoes in half. Rinse and drain olives, slice in half. Drain and roughly slice artichoke hearts. Add to a large bowl with mixed greens. Drizzle with extra virgin olive oil and balsamic vinegar. A squeeze of fresh lemon juice will finish it off! Toss lightly and serve. Happy tummies guaranteed.
If using the soy feta, crumble on top. Crushed walnuts or sunflower seeds also add a nice textural addition.
