Taco Salad

Save time by pre-cooking the corn and sweet potatoes.
You could also save time by using a frozen veggie medley, like corns, peas, and carrots (YUM!)

Ingredients:
mixed greens or lettuce of your choice
salsa (homemade is delicious, nutritious, and inexpensive!)
corn
black beans
sweet potato
avocado
vegan sour cream
tortilla chips

Ingredients:

Directions:
Wash and cut sweet potato into bite-size pieces. Place in a pan with water and cover with a lid. Cook over medium heat for 10 minutes, stirring often and adding more water if need be. Cook until bright orange in color and fork tender. Set aside to cool.
Layer your ingredients in a bowl. Crumble tortilla chips (this is a perfect use for the broken bits at the bottom of the bag, too small to dip) on top of lettuce, followed by beans, corn, sweet potato, and salsas. Top with avocado and sour cream.
If you like yours spicy, add in hot sauce, or jalapenos.

P.S. The sour cream is not necessary! We have made these without and used a sprinkle of Daiya Cheddar cheese, but honestly, there is plenty of flavor with out.
