Cinnamon Crispy Rice Squares

Ingredients:
6 cups of crisp rice cereal (Whole Foods has a great organic brown rice version)
3 tablespoons of plant-based butter replacement
1 10oz package of vegan marshmallows (try not to eat more than one!)

Ingredients:
6 cups of crisp rice cereal (Whole Foods has a great organic brown rice version)
3 tablespoons of plant-based butter replacement
1 10oz package of vegan marshmallows (try not to eat more than one!)
In a large pot or saucepan add 3 tablespoons of butter-like spread.
Over medium-low heat give it time to melt. Once liquefied, add in the marshmallows. These need a little time, so be patient, stir often, and don't be tempted to crank up the heat. After a few minutes, once they are mostly melted (I found that the marshmallows didn't completely break-down) turn off the heat.
Add your crisp rice and get to stirring! I did this in 2 batches, 3 cups, then the other 3 cups. Add a few strong dashes of cinnamon to give it even more flavor and nutrition. While stirring, if it cools too fast, feel free to put the heat back on low for a moment (I have a gas stove in front of an open window, and this was helpful).
Pour (or drop) into a 13 x 9 x 2 cake pan that has been lighted greased with the same spread. Use your spatula (or hands, if clean and feeling adventurous) to flatten and spread.
Resist temptation (I put away clean dishes to distract myself) for 2-4 minutes while they set.

These are also amazing drizzled with melted bittersweet chocolate. Simply melt your favorite chocolate (we used a mint dark chocolate bar for Christmas) in a double boiler and let your creative flair show. These were a huge hit where tiramisu and other heavy non-vegan desserts were present. Don't be afraid to bring a lighter healthier treat to parties and potlucks. The guests will thank you. |
