Cashew Cheese Please

The prep is simply soaking the cashews, which takes very little effort!
"Cooking" time:

Enough for a lasagna, or to enjoy throughout the week.
Ingredients:
1 1/2 cups of raw cashews* (you can alter this based on how much spread you need)
1-2 cloves of garlic
juice of half a lemon
water (about 1/4 to 1/2 a cup)
drizzle of extra virgin olive oil
salt and pepper
fresh herbs or seasonings of your choice. Basil works really nicely, but feel free to experiment!
*roasted cashews will not work with this recipe. Raw cashews can be found in the bulk shopping area of most grocery stores. You can also buy them online!

Place the cashews in a bowl with warm water and leave covered on the counter for 3-6 hours. If you are in a pinch, you can soak them for a shorter amount of time, but soaking them longer really enhances the texture of the "cheese" and yields a creamier blend.
Once soaked, drain and rinse. Add to your food processor or blender with the garlic, lemon juice, salt, pepper, and a little water. Begin blending. Slowly add a drizzle of evoo. Stop the machine and scrape the sides of the bowl. Add a little more water and the herbs and continue to blend. Once is becomes smooth, take a taste for flavor. If it is still too thick, continue to add more water until you have reached the consistency you desire.

This tastes good on everything! Bagels, sandwiches, crostini, lasagna, pizza, crudites, the list goes on.
