Avocado Cashew Cream

Soaking cashews can be done ahead of time.

Enough for a gathering or to snack on throughout the week.
Ingredients:
½ cup raw cashews
1 medium avocado
¼ cup lemon juice
½ teaspoon Italian seasoning
¼ teaspoon granulated garlic or 1 minced clove
salt, to taste

Directions:
Soak the cashews in a bowl of warm water overnight on the counter, or for a minimum of 6 hours. Perfect to do before you leave the house in the morning.
Drain the cashews and add to your blender or food processor with the other ingredients.
Blend until smooth, stopping to scrape the sides and adding more water if need be.
