Simple Tomato Pasta

Ingredients:
2 cups of tomatoes of your choice (buy what is in season and very ripe)
2-3 cups of pasta of your choice (we used black bean for added nutrition)
fresh basil (or dried basil and oregano work well too)
extra virgin olive oil
balsamic vinegar
sea salt
black pepper

Bring a large pot of water to boil. Cook pasta according to package directions.
Slice and dice your tomatoes into bite-size pieces. A rough chop makes for nice consistency (and who doesn't love biting into a good Summer tomato?!)
Place in a large bowl and add your herbs, generous amounts of sea salt and freshly ground black pepper. Drizzle the olive oil and balsamic over and gently toss or stir.
Drain and rinse pasta under cold water and toss with tomato salad.
Serve and enjoy the simple sweetness of this meal.
Notes:
If you wish, or have it on hand, top with a little cheese of your choice. We added feta and it was a nice touch.
This is the perfect dish to use up multiple ripe tomatoes. A wonderful and easy addition to a last minute pot-luck or picnic as well!
