Buy shelled pistachios in the bulk section to save time and money.

Ingredients:
1 1/2 cups fresh basil
1/2 cup cilantro
2 -3 cloves garlic
1 cup shelled dry roasted pistachio
1/4-2/3 cup olive oil
1 teaspoon lemons zest or 1 teaspoon lime zest (we used lime juice)
1/4 cup grated parmesan cheese or asiago cheese (we used peccorino romano)

Directions:
Layer your gorgeous ingredients in the food processor or blender.
Slowly pulse and drizzle with evoo until combined. You may need to scrape the sides to help it along.

This made our zucchini noddles and mushrooms irresistible! You will lick your plate clean.
Notes:
If you wish to make this dish vegan, simply omit the cheese (optional: add a few tablespoons of nutritional yeast).

We've made arugula walnut pesto, spinach sunflower seed, use what you have on hand, it's hard to go wrong. Use leftovers in a grilled cheese, or other sandwich, use to top a baked potato, add to a tofu scramble, add oil and vinegar to make a great salad dressing, drizzle into soup, etc.
