Chocolate Avocado Mousse

This is perfect for when you have a sweet craving, or need a healthy, yet rich dessert to share. It is also a great way to use up multiple ripe avocados.
"Cooking" Time:
10 minutes.
Yields:
Enough filling for one pie, or 2-4 single servings
Ingredients:
3 - 4 ripe avocados
raw cacao or cocoa powder
1 ripe banana (optional)
honey or agave syrup
1 - 2 teaspoons of vanilla extract (optional)
water or nut milk of choice

Directions:
Pit your avocados and spoon the flesh into your blender or food processor.
Add a half or whole ripe banana (this adds sweetness and flavor, so if you want it to be more mild, use only half).
Add a spoonful of honey or agave and the vanilla extract, if using.
Add 3 - 4 tablespoons of cacao/cocoa powder
Add 2 tablespoons of water or nut milk.
Pulse the blender a few times to combine the ingredients. You will need to scrape the sides and maybe add more liquid - no more than a tablespoon at a time (you don't want it to be too thin!)
Add additional cacao/cocoa until you have the desired flavor and color.
And voila! It is now ready for a parfait glass, layered with berries, yogurt, and granola. Or, pour into a ready made pie crust and top with berries and a non-dairy whipped cream. It is also really great on its own, so no pressure to pile on the toppings.
Refrigerate until ready to serve.

As part of our #nosugaradded January, we made this with soy whipped cream and Annie's Bunnies Graham Crackers. Mr. Foodie went for extra grahams, whip, and shredded coconut, while strawberries were my top choice. It was so great! I felt like a little kid with a big ice cream sundae.
