Simple Granola

This recipe is a wonderful base. Add in your favorite spices, seeds, nuts, and dried fruits. Play with seasonal flavors.

Ingredients:
2 cups rolled oats
1/2 cup slivered almonds
1/2 cup dried shredded coconut
1/4 cup crystallized ginger
1/4 cup coconut oil or 1/4 cup applesauce
1/4 cup maple syrup

Ingredients:

Directions:
Preheat oven to 350 degrees.
Combine dry ingredients and stir well. Add in wet ingredients and stir until dry mixture is evenly coated (you don't want it to be too wet). Pour mixture into a baking pan or cookie sheet. I make this in big batches, so feel free to use more than one cookie sheet. Be mindful to rotate sheets for even baking.
Bake for 10-15 minutes and stir with a spatula. Bake for another 10-15 minutes and then stir again. Keep baking for about 45-60 minutes total until golden brown all over.
Your kitchen will smell divine!
Enjoy immediately or cool entirely before storing.

I always have a variation of this on hand. It serves as part of my breakfast most of the week.
Granola is also delicious mixed with smoothies, sprinkled on ice cream (or sorbet), and added to trail mix.
It even makes a thoughtful gift (we made a batch for each kitchen during our wedding weekend, and received many compliments)!
