Portobello Pockets

2 whole-grain pita pockets
Daiya cheddar cheese style shreds
2 portobello mushrooms
1 green bell pepper
half of an onion (white or yellow work best)

Ingredients:
2 whole-grain pita pockets
Daiya cheddar cheese style shreds
2 portobello mushrooms
1 green bell pepper
half of an onion (white or yellow work best)
Directions:
Slice onion, bell pepper, and mushrooms into strips. Gently sautee onion over medium heat until translucent. You can use coconut or sesame oil, or even simply a little water. Add in pepper and mushrooms and continue to sautee under mushrooms are soft. Adjust heat accordingly.
Turn off heat and sprinkle with Daiya cheese. Some fresh black pepper, a final stir, and you are ready to stuff those pita!
If you have any spinach on hand, this is a great place to add it in.
Notes:
You may slightly warm pita in the oven, on the grill, or on the stove top in a pan. Serve with veggies or go crazy and have cleaner onion rings or fries. Alexia is a better option than most conventional brands.
