Yogurt Cornbread
Prep Time:
2 minutes to gather the ingredients
Cooking Time:
1 1/2 hours in Crockpot
Yields:
1 loaf (would also work great as muffins!)
Ingredients:1 cup whole wheat flour
3⁄4 cup corn flour or corn meal
3⁄4 tsp baking soda
1 1⁄4 tsp baking powder
1 tsp salt
3 Tablespoons sugar
(These are your dry ingredients. Mix together in one bowl)
1 Tablespoon ground flax
3 Tablespoons warm water
1 cup unsweetened plain yogurt (I used soy)
1⁄2 cup non-dairy milk of your choice
3 Tablespoons melted butter butter substitute or melted coconut oil

Place flax meal with 3 tablespoons of water and mix together in a second bowl. Stir in yogurt, nut milk, and oil.
Add this to the dry ingredients, but only stir until everything is combined well.
Grease a Crockpot (or a dutch oven) and put in dough, pressing down so it fills the pot. Cook on high (or bake at 300 degrees) for 1.5 hours.
Mix all dry ingredients together in one bowl.
Place flax meal with 3 tablespoons of water and mix together in a second bowl. Stir in yogurt, nut milk, and oil.
Add this to the dry ingredients, but only stir until everything is combined well.

Notes:
The bottom of my first attempt stuck to our Crockpot, so I will definitely be making this in a loaf pan and baking in the oven next time.
