Pumpkin Oatmeal Cookies

Depends on how much you like to share. Makes approximately 24 cookies.
Ingredients:
1 1/2 cups flour (I used millet, but whole wheat or all purpose also work!)
1 1/3 cups rolled oats
1/2 cup bran
1 teaspoon baking soda
3/4 teaspoon salt
1 tsp cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cloves (I love their aroma!)
1 cup sugar
1/2 cup applesauce
2 tablespoons molasses
1 cup canned pumpkin, or cooked pureed pumpkin
1 teaspoon vanilla
1 tablespoon ground flax seeds
1 cup walnuts, finely chopped (sunflower seeds are another great option)
1/2 cup dried cranberries (work so well with the pumpkin!)

Preheat oven to 350. Grease 2 baking sheets (I use coconut oil).
Mix together flour, oats, baking soda, salt and spices.
In a separate bowl, mix together sugar, applesauce, molasses, pumpkin, and flax seeds until very well combined. Add the dry ingredients to the wet in 3 batches, folding to combine. Fold in nuts or seeds and cranberries.
Use a spoon to drop onto greased cookie sheets. These don't spread out into cookie shape, so feel free to place them closer together and be sure to flatten the tops as well. We like to have a cookie shaping contest when making these :)
Bake for 15-20 minutes at 350. Rotate halfway to ensure even cooking. You can cook slightly longer for a crisper cookie, or cook less for a moist, almost scone-like treat.

Notes: These are so simple, with minimal clean up, and take modifications easily. Everyone will be a fan of these. I wrap them individually and carry as snacks in my purse!
